Death By Chocolate Avocados


I'm a sucker for all things chocolate.  There.  I said it.  And now all of you know.  One of the reasons I consider The Hubbs the perfect man for me is that he'd rather have celery than chocolate any day.  You know what that means?  I give him all of the stringy green water sticks I have, in exchange for his chocolate items.  It's a match made in heaven. 


I also have a bonus daughter that has gotten it in her head that she hates avocados.  How anyone hates an avocado is beyond me.  But she's actually puked into her dinner plate before because she had to take a bite of something with avocado in it.  But you guys know me.  I'm determined to find a way to get her to eat them, even if I can't get her to admit to liking them.

Enter stage left this past Sunday's dessert at dinner.  It's pure genius.  I can't take credit for the recipe because I found it here.  But I can take credit for pushing the button on my Cuisinart.  Yup.  It's that easy.  Dump some stuff in the Cuisinart and push go.  



Here's the low down on what you'll need:
  • 2 ripe avocados
  • 1/3 cup cocoa or cacao powder (I used Trader Joe's but you can use just about any kind)
  • 1/2 cup coconut milk
  • 1/3 cup pure maple syrup (not Aunt Jemima's colored corn syrup - REAL maple syrup)
  • 2 T honey (I use organic and local but you can use any honey)
  • Vanilla (a few drops of organic vanilla extract)
  • Cinnamon (a pinch)
Put it all in a food processor and hit the blend button.  Blend it until it reaches your desired consistency and then chill it (you can just stick it in the fridge until you're ready to dish it up).  

I served it over mixed frozen berries and it was fantastic!  Even Mr. Celery Lover loved it.  And the best part?  I didn't tell the youngest bonus daughter what was in it until she swore up and down that she loved it (as a means to get seconds).  I wish I'd gotten a photo of her face when I told her it was made from avocados.  Now you can go trick your own kids.  Because that's what we parents do.  You're welcome.
